Recently, at the 14th Annual Aquaculture Harvest Festival (held in Waycobah, N.S.) Geoff Nishi provided an oyster shucking demonstration and dished out sweet oysters from Mabou harbour. “These are exceptional oysters and we sell them to local restaurants,” he said in the midst of a demonstration. “They are so sweet because the water is so clean and there are so many nutrients in it.”Nishi has been involved in the oyster industry in Mabou since 2005 and expects business to continue to grow. - Courtesy of the Cape Breton Post - September 25th, 2011
